The Caribbean is a group of Islands and Countries sharing the same waters, through the Caribbean Sea, and usually a great and complex mixture of Spanish, Dutch, English, French and Native Caribbean Indian influences, in the social, the cultural, the religious and of course, the culinary experience.
This great exchange has brought a culinary expression that focuses the natural produce, simple cooking techniques and a colorful presentation, sometimes enhanced by a pinch of heat in the seasonings.
It is said in the Caribbean, that you first eat with your eyes, after with your mouth and finally, but not last, with your stomach.
We would like to encourage you to try the Caribbean Way, to enjoy the experience of the root vegetables, the fruits, the sauces and the heat.
This book has been fed by recipes sent by our dentists and doctors, friends of AIBOFA to serve as a way to pursue funds for the Dental Service for HIV Children of the Dominican Republic of the Association. Every time someone purchases a book, two soles will be pampered: the buyer, who will be introduced to the most extraordinary culinary experience; and the HIV children of the Dominican Republic, who will have an opportunity to satisfy their dental needs.
